While shopping with my friend/best and most amazing blogger ever Mandy, over at Kitchen Joy, we came across the most darling teeny tiny bright orange casserole dishes and, perched atop the lid, was a little chicken. We both saw them at the same time, looked at each other thinking “Seriously? How could something so cute be sitting there all by its lonesome little self without a crowd of women fighting over it?”. I think we both kind of sort of squealed ever so quietly with a little bit of excitement. There was only one set of two, and she told me that I NEEDED them. First, I am not one to argue, second, I really think she knows best, so into my cart they went. That’s a true friend. Now, to make a yummy chicken dish to properly welcome these adorable dishes to our kitchen. I came across this recipe while looking through old recipes of mine while Joe was away on business, and thought, yep, perfect. This dish is super easy, has amazing flavor and is also wonderful reheated. It makes a 9×13 pan, so there is plenty to go around. And the best thing about this dish is that though it may have a “small~ish” list of ingredients, it requires only a few steps of prep, and while the pasta is cooking you can get everything else ready to go. I’ve made this many times over the years, but I must say, I do believe it tasted MUCH better served out of my chicken dishes!

This casserole is a huge crowd pleaser! Loaded with chicken and veggies and a delicious creamy sauce, the chow mein noodles added at the end are the perfect crunchy topping.
This casserole is a huge crowd pleaser! Loaded with chicken and veggies and a delicious creamy sauce, the chow mein noodles added at the end are the perfect crunchy topping.
While pasta is cooking, combine soup, mayonaise, soy sauce and lemon juice in large mixing bowl and whisk well. Then add chicken, celery, water chestnuts and green onions and mix well.
Fold pasta into mixture and place in a 9x13 pan sprayed with cooking spray.
Bake for 20 minutes, then add chow mein noodles and bake for additional 5 minutes.
