Ingredients
3/4cupbutter (cold)
3/4cupwhite sugar
1cuplight brown sugar
2eggs(slightly beaten)
1TablespoonPenzey’s pure vanilla extract
3cupsall purpose flour
3/4teaspoonbaking soda
3/4teaspoonsalt
3cupssemi~sweet chocolate chips
Instructions
Preheat oven to 350 degrees
In bowl of stand mixer (or large bowl) fitted with paddle attachment, whip butter on medium speed until it comes together, approximately 1 minute, scraping sides of bowl as needed. Add sugars and mix until combine. Mixture might have small lumps of butter.
Add eggs, one at a time, mixing well after each. Add vanilla and mix until combined.
In separate large bowl, sift dry ingredients together. Slowly add to sugar/butter mixture on low until dough is just incorporated. Do not over~mix.
Add chocolate chips and stir by hand (dough will be thick). Line cookie sheet with parchment paper and drop by teaspoonfuls.
Bake 12-15 minutes, until edges start to brown. Let cool 5 minutes. Transfer to cooling rack.
