Sometimes life can get so busy. So busy you either don’t take the time to fix breakfast or lunch, or so busy that you simply forget to eat. I always thought it was funny when I would hear friends say they forgot to eat. Who does that? This house, being the food~loving abode that it is, it just always struck me as funny. I’m always in the mood to eat, so I couldn’t begin to fathom that whole notion. Well, as I sit here, drinking my lunch (featured recipe) WELL past a decent, acceptable lunch time, I get it now. Yes, the day~to~day busyness of life can honestly get in the way of eating. As I’m sure all of you can relate to. This smoothie is great because it takes all of five minutes to prepare, and it is so filling! It is not particularly a beautiful sight to behold, nothing fancy whatsoever, but I will say, it is satisfying and delicious! If you aren’t a user of protein powder (our boys and future daughter~in~law are avid “gym goers” so that is a staple in our house), then you can skip that and use vanilla greek non~fat yogurt instead of plain, otherwise it might not be sweet enough~at least for me. I did not break down all of the nutritional info, but I did manage, in my tiny math~hating brain, to figure out sugar and protein content, and they are as follows (approximate):

Protein = 33.5 grams (I use Cytosport 100% Whey Protein Isolate~Vanilla)  Sugar = 19 grams

Now, I know the sugar content in this recipe is high (most of it coming from the frozen fruit which has 13 grams in one cup), and I am not calling this a “healthy” smoothie, just one packed with protein (I use Cytosport because it has low sugar, high protein and is affordable). And truth be told, it IS more healthy than a lot of smoothies floating around out there. It’s just a simple quick meal replacement that you can take on the go when pressed for time, and most of the ingredients are what you might have on hand anyways. Ingredients
  • 1 cup unsweetened vanilla almond milk
  • 1 Tablespoon plain non~fat greek yogurt
  • 1 scoop vanilla whey protein powder
  • 1 cup frozen strawberries or mixed berries with bananas
  • 1 Tablespoon crunchy (or smooth) peanut butter
Servings: Cups
Instructions
  1. Place all ingredients into blender (we use Magic Bullet) and pulse until blended well. Serve immediately.
