One can never have enough fun, easy yummy cocktail recipes on hand, in my opinion. We love our bevies and for some reason I always seem to gravitate towards the pretty, blue/green, ocean-colored varieties. Probably because of my complete and undying love for all things ocean/beach/water related. With it being St. Paddy’s Day Eve, now seemed like the perfect time to share this libation with you all because one, I love you and two, it’s just too pretty to keep all to myself and I am just not the stingy type (stubborn? You bet, I’m Irish of course)…aaaand, you are welcome. I like my “special” cocktails to be a bit on the less-sweet side and they need to be just pretty enough to make me feel like I’m on vacation in the Caribbean…then add the flavors of coconut, rum and pineapple juice together in a glass full of ice and to me, that just screams “vacation”! Winter in the Mitten state seems to drag on FOREVER, and during those months is when I really crave some time at Three Sheets To The Wind, floating in the pool, music playing, sun beaming down and a cocktail in my hand. To me that, aside from being on the Harley, is the best kind of therapy. This one looks pretty similar to our famous Blue Peter Iced Tea, but it’s a bit more tame than its big brother and has a bit of a girlie flair to it, hence the name and the beautiful “Tiffany” blue color which I believe is just the best color ever! Now, I am off to sip this fabulous cocktail before the ice melts, and we are wishing you shamrock-filled days and a most happy St. Paddy’s Day to you all!
